Blueberry Crumble Muffins


I personally love spending time in the kitchen cooking and baking. There is something about the smell of fresh baked goods that is so welcoming.


These Blueberry Crumble Muffins take a regular blueberry muffin and bring it to a decadent level. These are perfect for Brunch, Tea Time, or when Company is coming. 

With Mother's Day around the corner these are the perfect addition to any Mother's Day Brunch Spread. 

I don't know about you, but the way to my heart is through my stomach. I love homemade goodies.


These Take about 5 minutes of Prep and 20-25 Minutes Baking. In 30 minutes you too can be enjoying these delicious Muffins. 

Ingredients:

Crumble
1/2 Cup Sugar
1/3 Cup Flour
1/4 Cup Butter
1 1/2 Tsp Cinnamon

To Make Crumble use a fork and combine ingredients. Should resemble a coarse crumble. 

Batter
1 1/2 Cups Flour
3/4 Cup Sugar
1/2 Tsp Salt * optional
2 Tsp of Baking Powder
1 Egg
1/3 Cup Vegetable Oil
1/3 Cup Milk
1 Cup Blueberries (Fresh or Frozen) 1 Tsp of flour to coat

Directions:

Preheat Oven to 400ยบ 

Line a Muffin Tin with Muffin Cups (Parchment Cups are the best for these Muffins)

In a Medium Bowl combine Flour, Sugar, Salt and Baking Powder

In a Small Bowl Mix Vegetable Oil, Egg and Milk. 

Slowly pour the liquid mix into the dry ingredients and combine well. 

Coat the Blueberries with a tsp of Flour to prevent the Blueberries from sinking to the bottom of the batter.

Carefully fold the Blueberries into batter. 

Using a Muffin Scoop Carefully scoop batter into a Lined Muffin Tin. 

Sprinkle a Generous Amount of Crumble on Each Muffin.

Bake for 20 to 25 Minutes.

Remove from Oven let sit for 2 minutes then remove to cooling rack.

These Muffins Can be served Warm or Cold. 

Enjoy with your choice of Jam, butter or just plain. 

***For an alternative twist add the zest of one lemon to the batter for Lemon Blueberry Muffins.***
